Alternatives to Plastic Packaging
At GOE Urban Farming we try not to be part of the problem. Most microgreens in chain groceries are packaged in plastic that ends up in landfills.

Below is the same set of alternatives, now with realistic common stock sizes. Dimensions are approximate external dimensions; capacities are nominal fluid ounces, so the appropriate produce weight depends heavily on cut style, density, and moisture.

Several practical alternatives can replace PET plastic clamshells while still letting shoppers visually assess fresh-cut vegetables. The most useful formats are fiber trays with a clear lid or lidding film, paperboard window packs, transparent compostable pouches, clear PLA containers, and returnable rigid packs.

Common pack sizes

For fresh-cut vegetables, standard retail capacities tend to fall into these bands:
- 4–8 oz: snack packs; useful for carrot coins, mini peppers, radish slices, or a small vegetable mix.
- 10–16 oz (about 1 pint): core retail size; works for celery sticks, carrot sticks, sliced cucumber, broccoli florets, or mixed vegetables.
- 22–32 oz: family-size or meal-prep pack; appropriate for larger vegetable mixes and higher-volume cuts.
- 35–46 oz: large salad, party, or food-service size; suitable where display area and product protection matter more than compactness. A widely sold large clear PLA clamshell is 46 oz and measures about 8.6 by 8.3 by 3.1 inches.

Actual fill weight depends on the crop. Dense cuts such as carrot coins or diced root vegetables deliver more ounces per container than broccoli florets, shredded greens, or microgreens.

Fiber tray + clear lid

A molded-fiber tray combined with a transparent cellulose or compostable lid is the most balanced replacement for a clamshell. The fiber provides rigidity and printable branding space, while the clear surface allows customers to inspect color, cut size, browning, free moisture, and overall condition.

Available and practical size ranges include:

- Small 5 by 5 inch tray: normally useful for approximately 4–8 oz of dense fresh-cut vegetables, or roughly 1–2 oz of microgreens, depending on tray depth.
- Small rectangular tray, 5.375 by 3.5 by 0.75 inches: a low-profile option for about 4–8 oz of sliced vegetables, carrot chips, or snack portions.
- Square 6 by 6 by 0.875 inch tray: useful for approximately 8–12 oz of vegetables in a broad, shallow, highly visible layer.
- Long 10-oz/pint tray, 10.86 by 4.45 by 1.16 inches: especially suitable for celery sticks, carrot sticks, sliced peppers, green beans, or other long cuts.
- 16-oz tray: a good core retail format for 8–12 oz of fresh-cut vegetables, depending on product density. Suppliers list 16-oz fiber trays with peelable barrier linings.
- 22- and 32-oz trays: appropriate for family packs, with dimensions commonly in the approximate 8–10 inch by 5–7 inch range, depending on the supplier’s footprint.

For refrigerated fresh-cut vegetables, specify a top-sealable fiber tray and use a clear anti-fog lidding film. A loose berry basket or open pulp tray alone is not adequate protection for a washed, cut, refrigerated product.

Paperboard window packs

Paperboard cartons and kraft bags can incorporate a transparent cellulose or PLA viewing window. They work best for relatively dry products, or for packs where an internal barrier layer and seal protect the paperboard from moisture.

Typical available sizes include:

- Small 4 by 6 to 4.75 by 6.75 inch packs: appropriate for a 2–6 oz snack portion, a small microgreen pack, herbs, or dry-cut vegetables.
- 6.375 by 9.1875 inch heat-seal bag: sold as a food-safe compostable kraft package, including versions with a clear window. It is a reasonable starting size for approximately 6–12 oz of shredded cabbage, carrot chips, snap peas, or a small mixed-vegetable pack.
- 6.5 by 2.5 by 9 inch gusseted kraft bag: includes a 3.5-inch PLA window panel. Its gusset gives it useful depth for an 8–12 oz retail portion, but it is less crush-resistant than a tray.
- 6.75 by 9 inch pouch: generally suitable for roughly 10–16 oz of cut vegetables, depending on gusset depth and product bulk.
- 10 by 13 inch pouch or carton: generally suitable for 16–32 oz family packs, particularly shredded vegetables and loose, non-fragile products.

A large, top-facing window is preferable to a small front window if customer inspection is a core part of the value proposition.

Fiber tray + clear film

A tray-sealed molded-fiber package is likely the best format for wet, high-respiration products such as broccoli florets, cut celery, carrot sticks, sliced cucumbers, and vegetable snack mixes. The clear top film provides much of the visibility of a clamshell while retaining the protection and stacking strength of a tray. Cellulose trays with PLA lids are commercially presented as compostable produce packaging.

Useful starting footprints are:

- 5 by 5 inches, 1.5–2.25 inches deep: approximately 8–12 oz for snack vegetables or compact vegetable mixes.
- 6 by 4 to 6 by 6 inches, 1.5–2.5 inches deep: approximately 8–16 oz; a flexible standard size for retail vegetables.
- 8 by 5–6 inches, around 2 inches deep: approximately 16–24 oz; suitable for a standard family pack.
- 9.4 by 6.9 by 1.2 inches: a shallow 24–32 oz presentation format where a wide, single-layer display is desired.
- 10.86 by 4.45 by 1.16 inches: approximately 10–16 oz, optimized for long-cut vegetables.

For this category, packaging development should test the actual product at its intended temperature and shelf life. Film permeability, microperforation pattern, anti-fog performance, and headspace affect condensation and the package atmosphere.

Transparent compostable pouches

Transparent cellulose or certified compostable-film pouches give the greatest product visibility without using a rigid clamshell. Their drawback is low protection against crushing, so they fit best for shredded vegetables, leafy cuts, small diced vegetables, and products shipped in protective cases.

Common practical pouch sizes are:

- 4 by 6 inches: about 2–4 oz; good for microgreens, herbs, garnishes, or small snack portions.
- 4.75 by 6.75 inches: about 4–8 oz; good for sliced radishes, carrot chips, or small shredded-vegetable portions.
- 6 by 9 inches: about 8–12 oz; practical for shredded cabbage, snap peas, carrot chips, and light vegetable blends.
- 6.75 by 9 inches: about 10–16 oz; suited to loose fresh-cut vegetables and leafy mixes.
- 10 by 13 inches: about 16–32 oz; appropriate for family-size greens or shredded-vegetable packs.

This is generally not the best choice for fragile broccoli florets or neatly arranged carrot and celery sticks unless the pouch is placed inside a protective paperboard sleeve or delivered in a rigid crate.

Clear PLA containers

Clear PLA is a near-direct functional substitute for clear PET: it preserves full visibility, stackability, and familiar retail handling. It is plant-derived bioplastic and is typically designed for commercial composting, but it remains a rigid plastic item and should not be described as universally compostable in normal household conditions.

Available examples include:

- 16-oz clear PLA clamshell, 5.875 by 5.75 by 2.25 inches: a good standard pack for 8–12 oz of fresh-cut vegetables, 2–4 oz of microgreens, or a compact snack/meal-prep mix.
- 16-oz low-profile format: useful when vegetables should remain spread in a shallow display layer rather than stacked deeply.
- 46-oz clear PLA hinged clamshell, 8.6 by 8.3 by 3.1 inches: suitable for 24–40 oz of cut vegetables, a large salad, or a party-size vegetable pack.
- 8 by 8 by 3 inch format: a common shorthand for the 46-oz class and a good size for large retail or food-service presentation.

For a business that needs clamshell-like merchandising immediately, clear PLA is the easiest change. For the greatest reduction in single-use plastic, shift instead to a fiber tray plus clear film.

Returnable rigid packs

For farm subscriptions, local delivery, restaurants, or other closed-loop sales, use washable rigid trays with a transparent reusable lid. Although sizes vary by supplier, sensible standard footprints are:

- 6 by 4 inches, 1.5–2 inches deep: 8–12 oz snack or small retail pack.
- 8 by 5 inches, 2–2.5 inches deep: 16–24 oz core retail or meal-prep pack.
- 8 by 8 inches, about 3 inches deep: 32–46 oz large household or food-service pack.
- 10 by 12 inches, 2–3 inches deep: roughly 2–4 lb, depending on product density; suited to restaurant or institutional orders.

The system only delivers its environmental benefit if containers are collected, washed, inspected, and reused enough times to offset the added material and transport burden.

Suggested standardization

For a small fresh-cut or microgreens operation, I would minimize complexity by starting with three formats:

- Small pack: a 5 by 5 inch shallow fiber tray, usually 4–8 oz fresh-cut vegetables or 1–2 oz microgreens, with a clear lidding film.
- Core pack: a 6–8 by 4–6 inch fiber tray, about 2 inches deep, usually 10–16 oz of fresh-cut vegetables or 2–4 oz microgreens.
- Family pack: an 8–9.5 by 6–7 inch fiber tray, roughly 2–2.5 inches deep, usually 22–32 oz of vegetables, with a broad transparent sealed lid.

This three-size approach keeps labels, case packing, merchandising, and purchasing manageable while providing a visible, non-PET alternative for most retail-cut vegetable products.
